The ingredients needed to make Thai Green Curry:
  1. Provide green Curry paste-
  2. Take lemongrass (if you don't have lemongrass,use lemon juice)
  3. Take galangal chopped
  4. You need kaffir lime leaves
  5. You need garlic cloves
  6. You need thai shallots(or green onion)
  7. You need thai sweet basil
  8. Provide coriander leaves
  9. Prepare green chillies
  10. Prepare Other ingredients:-
  11. Provide tofu cut into cubes
  12. Use eggplant
  13. Prepare vegetable of your choice
  14. Prepare bamboo shoots
  15. Take brown sugar
  16. Use coconut milk
  17. Take soy sauce
  18. Take green beans trimmed
  19. Take oil
  20. Provide Kaffir lime leaves
  21. Provide vegetable stock
  22. Provide salt
  23. Get Cashews to garnish
  24. Get Red chilli for garnish
  25. Provide Basil leaves for garnish
Instructions to make Thai Green Curry:
  1. Place all 'Green Curry Paste' ingredients in a food processor or blender, and add 1/3 glass coconut milk or enough to blend, blend it and make smooth paste.
  2. Heat a wok or deep frying pan over medium-high heat. Drizzle in oil and add2 tbsp green curry paste. Stir-fry until fragrant (about 2 minutes).Add stock plus lime leaves or bay leaves. When sauce comes to a gentle boil, reduce heat to medium-low or just until you get a nice simmer. Add all vegetables, Simmer 7-10 mins, or until all vegetable soft enough to pierce with a fork.
  3. Pour soy sauce, and add the whole kaffir lime leaves and sugar, stir well.
  4. Add tofu and bamboo shoots, stir and cook for 5 minutes. Then stir in green beans and bean shoots, cook for a further 2 minutes. Taste and adjust seasoning to suit your taste.
  5. Serve with jasmine rice or plain rice.
